Fun fact: The history of mayonnaise dates back to 1756 when the Duke of Richelieu, the nephew of Cardinal Richelieu, took residence on the island of Minorca, overthrowing English rule. To celebrate this victory, he hosted a lavish banquet for his troops, and the chef, for the occasion, wanted to prepare an initial egg-based sauce. This first sauce did not achieve the result the chef hoped for, so he opted to recreate the egg and oil mixture he had seen prepared by the inhabitants of the island of Minorca. In the vegan version, we prepare this sauce without the use of eggs.
