Caffeine-free and with a very sweet and fleshy pulp, carob has a particularly sweet flavor with notes of honey and caramel. Ciokarrua chooses to combine a minimum of 60% cocoa with carob to enhance the natural sweetness of the carob in the intense notes of a good dark chocolate.
