White teas are otherwise only known from China, but the processing methods are now also used in other origins. The mountain tribes in northern Vietnam carefully harvest a leaf and a leaf bud by hand. These are air-dried for several hours and then undergo a slight fermentation before being finally dried at 110°C. The result is a wonderfully fruity and very low-complexion tea that can also be enjoyed in the evening.
