Cassia Bark is from the Cinnamon Family and is commonly used in Sri Lankan and Burmese cooking. Cassia is commonly ground with cinnamon to make the modern massed produced powder you find in everyday pre-prepared food. In cooking add a wedge of bark into a cooking pot allow it to infuse with other ingredients and remove before serving.
