The most representative label in the collection is obtained by pressing green olives, mainly of the Tonda Iblea variety, which give life to an oil with a strong personality, with an intense profile characterized by green notes of tomato and herb. The olives are picked by hand in the territory of Chiaramonte Gulfi by the first half of October and processed immediately after harvest in our oil mill.
