Description

How can you take the pepper route without going to India? The cradle of pepper cultivation and one of the world's main suppliers of spices, it is on the Malabar coast that this little treasure is cultivated. In 1708 the English built a defensive fort in the town of Tellicherry to control the spice trade, especially pepper. This was the starting point for the English colonial empire. Tellicherry pepper was one of the first spices to be imported into Europe, making it one of the oldest species. A pinch of information This pepper should be ground or crushed at the last moment to take advantage of all its flavours and properties. Do not cook it to prevent it from becoming too bitter. Use it on all meats, with all vegetables, starches, salads, marinades, roasts, fish, seafood, etc. It adds flavour and warmth to goat's cheese and is particularly good in chocolate desserts, but also in fruit desserts. Recipe ideas: Sardines, raspberry coulis, fennel & Tellicherry pepper.
