This Parmigiano Reggiano has a dark color but tends towards the typical straw yellow. It is crumbly and grainy, as it is rich in tyrosine. The flavor of Parmigiano Reggiano aged over 50 months is unparalleled, resulting from long maturation which gives it unique characteristics. Weight has a =-10% tolerance due to traditional hand-sliced process.
