The black olive from the island of Thassos PDO is a small olive with a unique taste, neither bitter nor salty. They ripen as long as possible on the olive tree (to the point that they are the only olives that can be eaten directly from the tree). They are then handpicked and dried with very little salt (1.78%). No pasteurization or any other chemical treatment is applied to the olives, so they retain their full flavor. Vacuum-packed, they are not subject to oxidation and can be stored for over a year. Prepared only with water and salt, with a natural fermentation of 10 months. Their taste is complex and sweet, melting, and resembles candied prunes! No pasteurization, no additives, no colorants. Store in a cool, dry place. Refrigerate after opening. Vacuum-sealed bag of 2.5kg.
