The yellow potatoes of the Colli Viterbesi have a compact, firm yellow and not very floury pulp. Characterized by a typical scent of the fresh product, just picked. The color and texture of their pulp are due to the presence of carotenes. They are rich in minerals, vitamins and potassium. They fight hypertension and perform a anti-inflammatory action on the gastrointestinal system. They withstand cooking well and are therefore ideal in the oven, boiled for hot or cold side dishes and soups. Once cooked, the pulp takes on an intense yellow color.
