How to properly use the manual pasta machine Before first use, clean the device with a dry, soft cloth. Attach the device to the table using the provided clamp and set up the crank. Set the roller to mark 7 (by pulling and turning the knob), then pass a piece of dough through several times until you achieve a regular shape (fold the dough over itself if necessary to obtain a square). Gradually reduce the thickness of the roller by setting the knob to mark 6, then 5, then 4... to achieve the desired thickness, then cut to the desired length.
