Heather honey comes from the nectar of heather Erica australis, Erica umbelata and Erica arborea, which bloom between March and May on some slopes of the innermost area of southwestern Asturias. This type of honey is very aromatic, strong and has a very characteristic flavor. During the heather flowering season, the climate is still unstable, which causes crops to be irregular from year to year. It has an amber color with reddish tones, an intense and persistent aroma and a sweet taste accompanied by a bitter component and certain salty notes. Its production area is located in mountain scrubs in the southwestern area of Asturias: Allande, Tineo, Cangas del Narcea and Ibias.
