PGI Modica Chocolate is recognized and distinguished thanks to the refined scent of spices and the typical grainy consistency. Unique is its so-called “cold” processing that does not contemplate the “conching” phase and allows only cocoa butter to reach the melting point and not to the sugar, whose crystals give chocolate its typical graininess. Passages at high temperatures are therefore avoided, in order to preserve the properties naturally contained in the cocoa mass, such as flavonoids, antioxidants that help, in large part, to regulate the pressure, improve arterial function and decrease calcifying plaques at the coronary level.
