The Apulian tarallo probably originated in the early 1400s: a simple and humble product, it was prepared in peasant homes and offered to guests along with a glass of wine. The tarallo has been so successful in Italy and abroad that it has become a true traditional product and recently earned the PAT designation, Italian Traditional Agri-food Product. Delicious and crumbly, the onion-flavored taralli are one of the snacks that can never be missing from the tables of the Apulians. Ideal for a healthy afternoon snack, as a substitute for bread or as an appetizer before dinner, or paired with cold cuts and cheeses. They are practical and energy-rich, as long as the dose is not overdone. They are not suitable for celiacs but have no contraindications for those intolerant to lactose.
