Located in the heart of the IGP Canard à Foie Gras du Sud-Ouest (Chalosse, Gascogne, Gers, Landes, Périgord, Quercy), the ducks are cooked by hand by Clément and then pulled by hand. It keeps beautiful pieces in our rillettes for a racy taste and an ultra-melting texture.
