It is a natural red wine that is fruity and refreshing. We harvest the grapes from a partner winemaker in Anjou, then bring the whole grape clusters to Courbevoie (a suburb of Paris) where they are vinified. A 48-hour cold maceration is followed by the start of fermentation. We perform daily pump-overs for three weeks, then press the grapes and age the wine in tanks for 6 months.
