Pif à Papa is the story of Fady and Antoine, father and son, embarking on the adventure of producing natural wine in Île-de-France. They produce twelve different cuvées per year: red, white, rosé and even orange wine. While waiting to be able to operate their own vineyard (in 5 years, they estimate), Antoine and Fady have selected winemakers who cultivate grape varieties that they will want to plant and who work organically or biodynamically. They harvest by hand at their partners before bringing their harvest back in whole bunches to their cellar in Courbevoie where they do all the vinification without the addition of yeasts, enzymes and other oenological products and with the minimum of sulphur.
