Jody started smoking pistachios and almonds in his back yard for commercial distribution 7 years ago and developed today’s menu from years by building and refining the notion of “smoking small.” He developed a few key flavor profiles and his smoking process using applewood and charcoal on the Greig Farm. Today Papa’s gourmet smoked pistachios, almonds, and (new) beef jerky are available in more than 150 stores throughout the Hudson Valley and New England.
