Just arrived from Montreal, Valérie and her adorable Quebec accent have settled in the Grenoble metropolitan area where she offers a complete range of plant-based meats, homemade and with love. At the time, I was working in investment for a large insurance company and I was quite good at my job. However, there was real discomfort inside me, like a constant stomachache. It led me to think, in full awareness, about the changes that would benefit my life. The paradigm shift was under way. Once we settled, my project was to share my passion for plant-based cuisine as widely as possible, even though I knew full well that it would be a real challenge to do so here, in France, the home of gastronomy. We had just taken up residence in a region that is very proud of its cheese and meat, where the word “vegan” is very overused. That said, the French like to eat and they like to eat well. Vegetable meat offers an ecological, sustainable and easy alternative to those who want to reduce or stop their meat consumption without completely changing their eating habits, while remaining greedy. Although there are several reasons to advocate for a plant-based diet, I think the irrefutable argument concerns our future. If we continue to eat meat at the current rate, there will soon not be enough resources to feed the whole planet.
