At Seven Hills Pasta Co. we specialize in the crafting of traditional bronze-extruded, slow dried pasta. Carol and Giulio Caperchi founded Seven Hills Pasta Co in 2017, passionate about bringing the age-old craft of traditional pasta manufacturing to their Boston, MA Community. We carry a Traditional Line of pasta made with domestic Semolina flour, and an Organic Line made with the highest quality organic durum wheat and organic whole wheat flours. Our artisan pastas are shelf stable and ship very well. Because of our careful bronze extrusion process, our pastas acquire a rough texture that even the silkiest of sauces will cling to. Because every one of our small batches is slow dried at low temperatures for over 24 hours, our pasta gains that firm "al dente" quality that separates it from other mass produced industrial macaroni products.
