ANCESTRALE was born from a simple observation: since the first exploitation of olive groves by the Romans more than 2000 years ago, olive oil production techniques have intensified and olive varieties have diversified, often to the detriment of their quality. It is therefore from the observation of the nature of central Tunisia that ANCESTRALE finds its roots. Although the environment is semi-arid, it allows the good development of a variety of olive giving ANCESTRAL olive oil its sweetness and unique taste: Chemlali, used 100% in the production of our best product. Thus, ANCESTRALE values olive trees adapted to their environment. ANCESTRALE also supports and supports farmers who defend ancestral farming methods, inherited from Roman know-how. These methods, less and less used, are healthy, respectful and adapted to the olive tree and its environment: olive trees feed on the rare rains, no inputs or phytosanitary products are used, the pruning of trees and the harvesting of olives are carried out manually.
