Named after Calbayog, the City of Waterfalls and home to our cacao farms, this 78% dark chocolate bar is a deep, expressive homage to terroir. Made with just two ingredients—our own Philippine-grown cacao and organic cane sugar—this handcrafted bar reveals a symphony of almond, banana, malt, cinnamon, and tropical fruit notes. Grown in agroforestry, nourished with vermicast and seaweed-fish foliar fertilizer, our beans are fermented in santol-wood boxes for 5–6 days, then sun-air dried for eight on elevated platforms. Certified under PhilGAP by the Philippine Department of Agriculture, this 85g bar (150mm x 75mm x 6.8mm) is an elegant, origin-forward expression of the land that raised it.
