Description
Shiro Dashi Shoyu is a concentrated dashi stock made by the Daikō Shōyu brewery in Kinomoto, Japan established in 1852. It contains an infusion of bonito flakes (katsuobushi) and light soy sauce. Tasting Notes Light brown with a hazy hue, the nose of this dashi is characterized by smoked fish reminiscing bacon aromas. This dashi has a velvety mouth feel. Uses Mix with 10 parts of water to make a dashi stock for miso soups, noodle dishes (ramen, udon) or takoyaki and okonomiyaki. You can use it in its concentrated form to add smoky understones to creamy stews and soups.
