We decided to recover the ancient autochthonous tomato varieties of our territory, now completely supplanted by industrial ones, growing them on our land with traditional methods, picking them by hand and working them immediately after harvesting in a totally artisanal way. The Torremaggiorese round tomato, or Nana, and the San Paolo round: expertly harvested at the right degree of ripeness, blanched for a few minutes and then left to drain so that they lose all the liquid, past and packed in glass jars.
