Acetaia San Giacomo is an award-winning producer in the Italian region of Reggio Emilia. Originally a maker of traditional balsamic vinegars, they now make wonderful organically grown local grape wine vinegars. These vinegars are not diluted and produced in barrels, with the traditional long oxidation time at room temperature. These vinegars are wild, living things, and well worth seeking out.
