It is produced by a Belgian cooperative established in Kampot, La Plantation. Only ripe pepper clusters, with beautiful dark green grains, are picked by hand one by one. The grains are selected and then dried. Cold smoking, for long hours, accentuates its woody side and gives it warm, round, slightly liquorised notes, with a very nice length in the mouth.
