Our soup consists of: Stubble Amarantine Bean, Variegated Lentils, Pearl Barley and Broken and Hulled Green Peas. It is an excellent food rich in protein, starch and minerals. In addition, it is also a rich source of raw fiber. ♦ Preparation process ♦ In a pot, make a sauté with finely chopped onion (or shallot), garlic, chili, carrots and celery. Add some tomato puree, majority (or similar flavors) and bay leaf. Then pour the soup mixture into the pot and cover with hot water just enough to cover the mix. Boil everything over moderate heat for the indicated time. Finally, pour the soup into a plate and add some Extra Virgin Olive Oil. Soak no/ Cooking 50-60 minutes [pressure cooker 20 'from the start of the whistle]. All of our legumes are grown in the open field by local farmers.
