Zucchini is native to Central America and Mexico, where it would have been domesticated 9,000 or 10,000 years ago. The Spanish conquerors introduced it to Europe in the 16th century, where it quickly met with great success. Zucchini can be eaten cooked or raw like cucumber. It is common in Mediterranean gastronomy. Cooked, it can be eaten boiled, sautéed, fried, stuffed, in gratin or in soup. Often combined with white meat or fresh cheese, it is also used in the composition of ratatouille. It is also used in vegan cakes, as a substitute for butter, giving them a soft texture without changing their taste. There are different colors for zucchini. The best known is of course the green one but there are yellow ones that are much sweeter than the green zucchini.
