Melva is a blue fish that belongs to the Scombridae family; like mackerel, tuna, or bonito, among others. Its characteristics include strong and tough skin, with few scales, as well as an elongated, rounded, robust body with a short snout. Regarding its organoleptic qualities, it has a very peculiar taste and aroma. So much so that it is distinguished from other tunas because of it. The canutera melva differs from the regular melva mainly in two factors: the weight and the color of the fillets. The canutera melva does not reach 600 grams. Once extracted, its fillets are like grayish-white tubes instead of pink like the regular melva.
