The water comes from a source specific to the estate. Respect for the environment, the use of nature's goods intelligently and sparingly or the integration of agricultural practices into the biological cycle of life are applied down to the simplest detail. The fragility of the natural balance, just like the benefit of organic farming that maintains this balance instead of disturbing it, quickly becomes visible on a noble crop such as the vine. “Quality and not quantity” is one of the fundamental principles of Domaine Richeaume. Before harvesting, any surplus of grapes is eliminated by hand, in order to increase the quality of the harvest. The quality of the vines and their production is thus regulated by a very severe pruning, allowing a strict restriction of the harvest. Yields are limited to nearly 20 hectoliters per hectare, while the appellation allows a production of up to 55.
