Rinci is an excellent artisan company from the Marche region, founded in 2015 in the heart of the Conero Park. Our core business is Paccasassi, the dialect name of sea fennel, a spontaneous plant that we have decided to cultivate as it is protected by the legislation of the Conero Natural Park for bring it back to the tables because it is very good. We control the entire supply chain: we grow stone-pacers organically in their natural habitat and at km 0 we transform them, creating from traditional pickled oil to innovative sauces. Paccasassi are a real superfood: rich omega-3 fatty acids, and a real source of vitamin C, so much so that sailors used it as a natural anti-scurvy. They are extremely versatile in the kitchen. They are perfect in appetizers or served with meat and fish dishes. A classic combination with us is paccasassi, stracciatella and mortadella but they also go very well with anchovies, smoked salmon and oysters.
