As a child, snack cakes were my ultimate comfort, bringing joy to my days. As I grew older, my focus shifted towards my Faith and supporting children in need through volunteering. But one day, after indulging in my beloved childhood snacks, everything changed. I started experiencing constant tummy aches, joint pains, and extreme fatigue that kept me bedridden for days. When my physician husband suggested a gluten-free diet, I finally saw a ray of hope. The relief I felt as my symptoms vanished was truly life-changing. Yet, a new challenge arose for my volunteering. Now, when I attended fundraising galas, I was unable to enjoy the delicious meals due to my gluten intolerance. I realized I needed a convenient snack that catered to my dietary needs. Inspired by my need for accommodation and feeling I was being called by God to provide relief for others also suffering, I delved into gluten-free baking and Rosie Cakes was born! Rosie Cakes are a gluten-free almond snack cake for those with celiac disease or gluten sensitivity, yet delicious enough for everyone to enjoy. The Rosie Cakes journey has faced hurdles and doubts along the way, but the overwhelming support from the community has kept us going. Even through the chaos of the pandemic, we baked gluten-free delights to uplift individuals and bring families together. Today, my mission is clear - to offer scrumptious gluten-free snack cakes that delight the taste buds and nourish the soul.
