Our story begins in 1885 in Ollioules with our great-great-great-grandfather, Louis Jonquier. On the floor of Maison Jonquier, you have the family who lives. On the ground floor, a wax smell is very strongly present. It must be said that our grandfather was “Ciergier” (manufacturer of candles and candles). With the arrival of electricity in France, this is a bit the crisis because sales are gradually drooping and he wonders how he will succeed in feeding his family. Winter is approaching and with this the long-awaited and traditional moment of the Thirteen Desserts de Provence. For this he brings together the various desserts and begins to prepare notably the Black Nougat and the White Nougat. His production was then intended only for his family and his circle of friends. Among them is a pharmacist who on the occasion of a tasting share with him an anecdote... the Nougat would come to us from the Romans and would be originally... a medicine. They then start a discussion that will lead them to make the decision to work a unique recipe. A high-quality nougat where flavor and sweetness will be achieved only by a careful balance between Honeys and Almonds. Today we are proud to maintain this tradition and demand.
