About les collines

Farm to spoon since 2013. Handmade in Hillsdale, NY, les collines are jewels and gems of flavor and color, preserved in small batches. Inspired by an abundantly fruiting crabapple tree, we made our first batch of beautiful garnet jelly in the autumn of 2013. French for ‘hills,’ les collines pays homage to my mother, Coline, to the beautiful hills of Columbia County, NY, and to time living in France. We source the bounty of the seasons from small family farms in the Hudson Valley and Berkshires to showcase the incredible produce of our region using traditional methods, lower sugar, and all natural pectin. As food critic and author Ruth Reichl has noted, the flavors of les collines are remarkable, tasting like preserved fruits, rather than sugar. Our customers tell us les collines are like summer in a jar, recalling misty mornings picking berries, wondrous steaming pots, the memory of a grandmother’s recipe…just grab a favorite spoon, and be transported.
