Curious to understand the health benefits of Extra virgin Olive Oil in the Mediterranean eating, I joined the Yale Olive Institute, attended International conferences about the health effect of compounds in EVOO, called Polyphenols and associated clinical trials taking place in USA, Italy, Greece and Spain. Visited many boutique Organic EVOO producers, saw their operation tasted and analyzed their products and learned: "Higher the Phenolic Content of EVOO, higher the health benefits from its long term use". With that knowledge i am importing High Phenolic Extra Virgin Olive oil and the Organic kind at an affordable price for USA customers.
