The cherries are hand-picked at peak ripeness, carefully selected, and floated in fresh mountain spring water. They first undergo a 24-hour sun pre-dry on raised beds before entering a 72-hour anaerobic dry fermentation. Once fermentation is complete, the cherries are manually transferred back to raised beds for a final sun-drying stage lasting 25 days, ensuring exceptional flavour development.
