2025 Signature Organic EVOO Our 2025 Signature oil is a unique early harvest style with fruity, herbaceous aromas and a gentle peppery finish. Cold pressed from green and turning colour olives, varieties include the rare Bouqettier, Mission and Verdale. This certified organic oil is unfiltered, unrefined and lovingly hand-bottled in small batches. Our heritage trees in the Grampians rely solely on natural rainfall. Once picked, olives are cold pressed immediately producing a low yield of ultra-premium organic olive oil - beautifully concentrated in flavour and full of life. On average, each heritage tree produces just one precious litre - so every 2L cask reflects the harvest of two full trees and a year's worth of care. It's a true taste of the Grampians - capturing the character of the land and the season. Our Signature Organic Extra Virgin Olive Oil has won the following awards recently: Gold Medal - 2025 Australian Golden Olive Awards Best in Class - 2025 Australian Golden Olive Awards Judges' comments: "Fresh green herbal aromas with sweet banana, lime, and ripe bush tomato. Moderate transfer to the palate with hints of endive, citrus, and bitter greens. Creamy mouthfeel with a snow pea shoot tendril astringency. Balanced bitterness and pepperiness with a moderate length." Limited Availability Notice Due to the drought and heatwave conditions at flowering, this year’s harvest was significantly reduced (around 20% of a normal year). We understand this is disappointing and appreciate your patience and support - it means a lot during challenging times. When will you restock larger sizes? We're hopeful of a better crop for our 2026 harvest. As a single-estate, dryland olive grove, we rely entirely on natural rainfall - it's a big part of what makes our organic oils so special and unique. But it also means in low seasons, bulk sizes are not available and/or sell out quickly. In the meantime, we're offering our 2025 Robust EVOO in bulk - originally for chefs, now available for both home and professional kitchens.
