Highly dutched cocoa powder made from high quality West African beans with 22/24 % fat. It has a smooth chocolate flavour and a dark colour. Dutch-processed cocoa powder is treated with an alkali to neutralize its acidity. Dutch-process is not always interchangeable with natural cocoa powder because dutch-processed powder is missing the acids needed to leaven baked goods.
