Oltresole's organic red lentil flour is a certified organic legume flour. Unlike common wheat flour and other types of flour such as spelt flour, it does not contain gluten. It also has a higher protein content than cereal flours. It has the benefit of enriching common doughs made from cereal flours with useful nutrients such as vegetable proteins, iron and the mineral salts that characterize this legume. Lentil flour brings with it the beneficial properties typical of these legumes. Red lentil flour can be used for both savory and sweet products, especially in the East. It is particularly suitable for preparing vegetable meatballs and falafel, gnocchi, tagliatelle. In India it is used a lot, they prepare gnocchi called mangodi.
