Preheat oven to 350 degrees. Add mix 3 cups water & 1 - 28oz can petite diced tomatoes. Stir well. Bring to a boil on high & cook approximately 10 minutes until pasta is done, stirring frequently. Add 2 cups cooked squash, eggplant or zucchini cut into cubes. Pour mixture into an 8x8 casserole dish. Top with grated mozzarella or parmesan cheese. Bake in oven approx. 10 minutes until cheese is bubbly. Serve with a Caesar salad & French bread.
