This recipe was developed in collaboration with the master brewer Jean Bollendorf, founder of Okult beer, now marketed by the Simon Brewery. Spéciale N°7 is a Triple Belge style beer characterized by a nice foam neck. The sweet and creamy mouthfeel comes from oats and their good alcohol content. Wheat and spelt provide body, freshness, a spicy touch and a slight nutty taste. Herbaceous and floral flavors from the hops used complete the final tasting. Tasting temperature: 6 - 8 °C. Dishes: sourdough bread, Corsican or Ariégeoise charcuterie, Comté 18 months and over, old Gouda or Cheddar, Roquefort, Munster... Desserts: chocolate cake, waffles or maple syrup pancakes. Color: blonde with orange highlights. Bitterness: medium at the end of the mouth.
