Apulia, the sunny southern region of Italy, offers the ideal place for the production of the best pasta. Pastificio del Colle has gained an excellent position among the best artisan pasta factories in Italy. Mr. Vito Nettis, the current owner, is the nephew of Vito Nettis, who was carrying out various food activities almost in the 1920s. The processing of our pasta prefers artisanal techniques, working the dough manually or using bronze dies that make it a rough product, suitable for containing all types of sauces. We use high quality durum wheat, 100% Italian and natural dyes: turmeric for the yellow color, spinach for the green, beetroot for the violet, paprika for the orange, spirulina and apple extract for the blue and sepia for the black. All forms are slowly dried for 36/40 hours at a low temperature of max 39° C, which allows the product to preserve its organoleptic characteristics.
