At Chocs ‘N Boxes, LLC, we craft premium tree-to-bar chocolate from cacao beans grown on our own single-estate farm in the Philippines. Rooted in sustainability and quality, we nourish our cacao trees naturally with organic vermicast and foliar fertilizers made seaweed and fish fermented with molasses. Our harvest is meticulous—only fully ripe pods are handpicked. The beans are fermented in three-tiered wooden boxes for 5 to 6 days, then sun-dried on elevated platforms inside a UV-covered, airflow-optimized facility for eight days using an intermittent drying method. Once dried, the beans are sealed in GrainPro hermetic bags to preserve their flavor and hygiene. We strictly follow Good Agricultural Practices, earning us a PhilGAP certification and recognition as the Outstanding GAP Certified Farm in the Visayas in 2024. From farm to flavor, we bring our dried beans to our Norridge chocolate shop, where they are roasted, cracked, winnowed, ground, and conched in small batches to highlight the natural notes of our origin cacao. Every bar supports our mission: to sustain our farm and provide stable livelihoods for our dedicated farm workers.
