Originally from western Cameroon, my father took us every vacation period to the city of Penja, rich in coffee, ginger and its treasure, Penja pepper, whose unique flavor is due to the volcanic soil of this region. Pepper with character, full-bodied with a good length in the mouth, this spice is my Madeleine de Proust... I remember the woody scents and menthol aromas that emanated from the pepper plantations of Tata Marie Poulet, my mother's cousin. I remember the spicy dishes with Penja pepper, which my mother, as well as our aunt, cooked. Fish and chickens with tangy, amber and musky flavors, magical aromas... Rare, precious, exceptional pepper, luxury spice, harvested manually, then subjected to a treatment of ancestral tradition, to become fit for consumption.
