Everything we do is about flavor, so we make our chocolate in small batches, taking up to 21 days at low temperatures (industrial chocolate takes a few hours). We never add vanilla or lecithin as they would hide the precious flavors of the beans. We make everything from scratch. Even roasting and grinding whole hazelnuts to get that freshly roasted taste in our truffles. And we make our Salted Caramel just as you would in a restaurant, clarifying the butter, caramelising the sugar and adding Devon double cream. Willie Harcourt-Cooze, cacao farmer, pioneer and chocolate fanatic has changed how millions of people around the world think about chocolate.
