In 2003, Daniel Roldão, the promoter of this project, considered setting up a free-range egg-laying hen farm in organic mode and, while developing the business plan, realized that 30% of the production would be lost due to the small size of the eggs at the beginning of the hens' laying period. The idea then arose to give them another use, the Portalegre egg candies, and from there the ideas kept growing. Sabores Santa Clara was founded in 2005 and the inaugural product was the Portalegre Egg Candy. With all the inspiration from the history of the convents in the city of Portalegre, on December 9, 2005, the first tins of Portalegre egg candies from Fábrica do Rebuçado® appeared in the now-defunct Atalaia grocery store in Bairro Alto. The unmistakable tins with the colors of the city of Portalegre quickly became a market reference.Read their story
