France has made gastronomy a trademark. Few other countries have such diversity and quality of food. We are envied, jealous... Especially our cuisine from the South West... Inherited from our ancestors, it is a delight for the taste buds! Foie gras, duck confit, cassoulet (from Castelnaudary), canned cassoulet but also fevoulade or lentillade have become real references! In 1993, Jean Claude Visentin and his wife Claudine imagined and opened the restaurant Le Tirou in Castelnaudary and highlighted local producers through their family recipes and especially the famous CASSOULET DE CASTELNAUDARY. Since the second year, the Michelin Guide has been referring to LE TIROU as a quality table. Recognized Maître Restaurateur, to validate entirely homemade cuisine and member of the Culinary College of France In 2005, following a request for takeaway products from their customers, they built and opened the Coustelous. We work in collaboration with local breeders who speak only of quality and of course, we cook the famous Castelnaudary bean. In 2014, our son Anthony joined the team, with Adeline his partner, and now works with us to continue our work while keeping our motto: Home-made and quality local production. This earned us to become a member of the Culinary College of France.
