About Tradition Coffee Roasters

Tradition Coffee Roasters was born from the firehouse coffee ritual that shaped founder Brian Burik—a Queens native and retired FDNY Lieutenant who spent 21 years sharing hot pots of coffee with his crew before every shift. A life-changing espresso in Italy sparked his passion for high-quality roasting, and after retiring, he committed himself fully to mastering the craft. Together with Lindsey, a finance professional with family roots in Kailua, he moved to O‘ahu to build a roastery grounded in connection and Hawaii’s rich coffee heritage. Today, Tradition Coffee Roasters is a Kailua-based, small-batch roastery focused on sustainable sourcing, mindful craft, and honoring every hand that touches the bean. We believe coffee brings people together—whether in a firehouse, at home, or in a favorite neighborhood café—and we roast with that spirit in mind. Through education, storytelling, and genuine relationships across our island community and wholesale partners, we’re building a brand centered on quality, community, and connection—one cup at a time.Read their story
