One of the honky-tonk’s most famous dishes? Gilley’s Wild Bull Chili, served hot every night and best enjoyed with an ice-cold Gilley’s beer. The chili was so loved, we started packaging the seasoning so folks could bring the taste of the dancehall home. It was a hit then, and it still is now. My name is Jeffrey McDonald, and I grew up with Gilley’s in my blood—and Wild Bull Chili on my plate. After college, I worked for Mickey Gilley himself, eventually becoming his business manager. Years later, I founded Gilley’s Food & Beverage Co. to carry on his legacy in a way that honors both his flavor and his flair.
