We’re a Mexican-American family bringing real tortillas made the traditional way — with heirloom flour, real fats, and no seed oils. Inspired by our roots in Mexico and made in Austin, Mesocano bridges the past and present, honoring our family’s recipes with every tortilla. Why Mesocano Costs More Mesocano tortillas are made the hard way — on purpose. We use heirloom flour, real animal fats, and no seed oils or preservatives, which means higher ingredient costs, shorter shelf life, and more hands-on work. Our tortillas are mixed, pressed, cooked, and packed in small batches by our family in Austin — not outsourced, not industrialized, and not optimized for shortcuts. We choose: Real butter, beef tallow, and pasture-raised pork fat Heirloom wheat instead of commodity flour Fresh production over long shelf life Paying our team members and our suppliers fairly That combination doesn’t scale cheaply — but it tastes better, digests better, and reflects how tortillas were meant to be made.
