Hi! Welcome to Gluten Free Nation! Over 20 years ago, I was diagnosed with an autoimmune disorder called Celiac Disease. The only treatment at that time, and still today is a completely Gluten Free diet. And it is great!! I'm never sick and I don't have to take medications that may have side effects. At that time, the selection of Gluten Free baked goods that were commercially available were very limited, and not very good. So, I started baking.
